First thing to remember, Baldur’s Gate 3 merchants does stock reset. But only after a level up or a long rest. You need to either of them to trigger a merchant stock reset. Otherwise, you are stuck with whatever items presently exists.
Okay, wanna know the BG3 traders? There aren’t many merchants in the game at the moment. Because we can only play the act 1 so far. I believe the number of traders will quadruple with the full release.

Holy mudcrab merchant saint. It has lots of golds to trade and really good to have at camp. So, I say go get this mod and enhance your BG3

Baldur’s Gate 3 merchant prices are determined by two things. First, your bartering characters charisma. Higher charisma means cheaper prices. Especially bards, tieflings, and warlocks are lucky because charisma is their main attribute.
Other price determining factor is the attitude. Specifically, the merchants attitude towards the character he is bartering. So, how does one increase their attitude level with a vendor in BG3? You can increase attitude by doing unfavorable trades. Basically giving free items to the vendor or selling stuff cheap increases their attitude. It is a favor system and worth abusing.

Of course by helping trades with various quests should increase their attitude towards you. But I don’t think that’s a feature at the moment. Not in the early access at least. But we can expect it to happen on the full release for sure.
